Featuring the Best Flavors of the Early Autumn Growing Season!
Ratatouille by Emerald Acres Farm of Door County is delicious served cold or warm and incorporates some of the best flavors of this time in the growing season! All of the ingredients in this recipe are currently in season and available at the Emerald Acres Farm booth in the Sturgeon Bay Farmers Market.
Ingredients:
1⁄2 cup finely chopped onion
1-2 cloves garlic minced
1 TBS olive oil
2 cups cubed, peeled eggplant
1 small zucchini or yellow summer squash, halved lengthwise and cut into 1⁄4” thick slices
1 cup chopped tomatoes (remove skins if desired) or 1 7 1⁄2 oz can tomatoes cut up
1⁄2 cup chopped green sweet pepper
2 TBS dry white wine or water
1 1⁄2 tsp snipped fresh basil or 1⁄2 tsp dried basil, crushed
Directions:
In a large skillet, sauté onion and garlic in hot oil until onion is tender. Stir in the remaining vegetables, wine (or water), 1/8 tsp salt, and 1/8 tsp pepper. Bring the mixture to boiling, then reduce heat and simmer, covered, for about 20 minutes or until tender.
Remove the cover, toss in the basil and cook an additional 5 to 10 minutes or until the mixture has thickened, stirring occasionally. If desired, sprinkle with cheese (shredded Swiss cheese or parmesan-optional). Makes 4 servings.
Serve warm or cool. Can also serve over a bed of fresh pasta.
